The Cooking Continues...

I've reallllllllllly been in a cooking mood lately. Surely it will wear off soon. Today it was fried rice (chicken) and marbled brownies.
I don't really have a recipe for fried rice, but I think I'd like to have a more refined one than just tossing in whatever I want. I just kind of base it on taste so I can't help but wonder what flavors I could be adding that would really boost it. Don't get me wrong, this is one of the favorites in the house, but still... if anyone has a really good recipe, please throw it my way! One of these days I'll try shrimp in it, but I never think about that for some reason.

I really enjoy this because it gives me a chance to either use up any fresh veggies I have laying around or even some leftovers from other meals. I was happy to find a place to use the zucchini I still had!!! (In my world zucchini makes everything better) I just lightly sautee it in olive oil and a little soy sauce (so that its softened). Then I chopped some red bell pepper, scallions, but I'll admit to using frozen vegetable medley. I poach the chicken, then dice it. As soon as the rice is done in the rice cooker (cuz I'm lazy there, too) it gets tossed into the pan with whatever I feel like on that day.

I'm not sure why, but I felt like baking today so I threw these together. Ahhhhhhh chocolate!

Now, I'm taking my over-fed butt to bed. This weather is making me VERY sleepy!

Can you share your method for poaching chicken? I've never done it - it scares me for some reason and I'd like to try.
